Key West Chicken and Shrimp

I had a dish similar to this at Cheddars, a restaurant that my sister works at, that was so good! I wanted to try and replicate it at home. Although it isn't exactly the same, it was pretty tasty. If you wanted to omit the shrimp you could and just grill the chicken, it is just as good. Yum!

Key West Chicken and Shrimp
slightly adapted from All Recipes

Ingredients:
3 tablespoons soy sauce
2 tablespoon honey
2 tablespoon vegetable oil
2 teaspoon lime juice
2 teaspoon chopped garlic
4 skinless, boneless chicken breast halves
Directions:
In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Reserve small amount marinade for shrimp or make another batch. Place chicken breasts into the mixture, and turn to coat. Then, place shrimp in second marinade or reserved marinade. Cover, and marinate in the refrigerator 4-8 hours. The shrimp may not need as long to marinate.

Preheat an outdoor grill for high heat.

Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear. For the shrimp, place on skewer and grill 2-3 minutes until pink.

Place chicken on plate and top with 6 or so shrimp. If desired, add extra marinade for dipping.

This looks like a really good, but simple recipe! Easy enough to do on a weeknight.

I love Cheddars! Have you ever tried their Baked Spasagna? If not, you should definitely try it next time you go! Recipezaar has a great copycat recipe.

It is pretty easy. Just marinate it the night before or in the morning before heading to work. It will be even better the longer it marinates!

I wonder if coconut milk might be an ingredient they use? I get this at cheddars when I eat there and love it. I was gonna try to wing the recipe on my own tonight but googled and found this. so the shrimp are marinading right now! Thanks so much for sharing this!

we just got a cheddars in clarksville tn love the food and tried the key west chicken and shrimp it was great it had a pineapple pico de gallo sauce on the top would you have any ideas on how I could make this.

3 small to medium sized tomatoes

1/2 large onion

1 jalapeno pepper

2 cloves fresh garlic

1 bunch cilantro

1 small can pineapple tidbits drained, 1 T juice reserved

1 lime
