Sweet Treat Tuesday- Fresh Strawberry Cake with Chocolate Icing

This cake is so delicious! I made it last week for my birthday. Yes, I know, I shouldn't make my own birthday cake, but I don't mind, and I would rather have a yummy homemade cake than an average store-bought cake. Plus, it gives me a chance to try a new recipe! I got the cake recipe from Southern Plate, a really cute and yummy food blog. I normally do a cream cheese icing for strawberry cake, but I wanted to try something different, so I used my go to chocolate icing recipe to ice it instead. It was a perfect combination!



Fresh Strawberry Cake with Chocolate Icing
slightly adapted from Southern Plate

Ingredients:
1 Box Plain White Cake Mix
1 Cup Chopped strawberries, with juice
3/4 Cup Milk
1 Package Strawberry Gelatin (jello) (3 ounce)
3/4 cup Oil
3 Eggs

Directions:
Grease and flour two 8 inch round baking pans or one 9×13 inch pan, or use pam spray with flour in it. Gently mash strawberries by placing them in a large plastic bag and rolling over it with a rolling pin or large can, can also use a food processor. Place cake mix, milk, gelatin mix, vegetable oil, and eggs in large mixing bowl. Beat with an electric mixer until smooth and creamy, about two minutes. Add in strawberries and juice, mix again until well combined. Pour into baking pans. Bake at 350 for 25-30 minutes or until toothpick inserted in center comes out clean. If using two round pans, allow to sit for ten minutes before turning out of pans to cool completely. If baking in 9×13 pan, simply allow to cool in pan.

Icing Recipe

Ingredients:
1 stick butter, melted
2/3 cup Hershey's Cocoa
3 cups powdered sugar
1/3 cup Heavy Cream (or more to thin icing) or milk
1 tsp vanilla extract

Directions:
Melt butter. Stir in cocoa. Add cream and sugar, alternating on medium speed. (Can add more milk, I always add a little more milk) Stir in vanilla after mixing. Will cover one two layer cake.
