Easy Baha Fish

Wow, was this good, and easy, and healthy! I made this last week and we all gobbled it up. The only thing I would change about the way I serve this next time, will be to serve it on top of tortilla chips. We had them on the side, but I think putting them on the bottom of the dish would add a great crunch! You need to try this! (I separated all the ingredients to this dish for the kids and they loved it.)


Easy Baha Fish

Ingredients:
4 fillets of white fish (tilapia is our favorite)
garlic powder
salt
pepper
2 TBSP butter
1 can black beans
guacamole (recipe here)
salsa of your choice

Directions:
Season both sides of all fillets with garlic powder, salt, and pepper. I didn't measure this. I just sprinkled the spices over the fish. Melt butter in skillet on medium-high heat. Cook fish in butter, turning once. When fish can flake easily, it is ready. While fish is cooking, warm beans on stove top. I cook mine in the juice that is in the can. Once everything is cooked, place a spoonful or two of beans on a plate, top with cooked fish. Place a dollop or two of guacamole on top of the fish, and then finally top the guacamole with a spoonful or two of salsa. Serve with tortilla chips. An alternate way to prepare this would be to put the chips on the plate first, and then top with beans and fish. This was so delicious, and healthy!!

Fish covered in guacamole? YUM :) !! Do your kids actual eat this kind of food? Most kids are too picky to appreciate such a dish!

Usually when I make a dish like this, I give it to them all separately. Beans, fish, and guacamole with chips all on a plate. They tend to eat things better if they are separated. But, yes they ate it like that. They love guacamole, I meal really love it.

Totally forgot to share that we serve ours on top of a warm corn tortilla....serve it to kids as a fish taco!

Sounds FANTASTIC! Always looking for new fish recipes, especially Tilapia! And yes the kids will eat it too. :) Like you, I'm no short order cook, what you see is what you get around here!
