Sweet Treat Tuesday- Easy Sopapillas

New Year's Eve was spent at home and me and hubby were in bed before 11. We did make a yummy dessert to have before heading to bed. I made easy sopapillas. I had been thinking about them and my tummy wanted them, so we had them. They are easy to make, and you probably already have all the ingredients on hand to make them.



Easy Sopapillas

Ingredients:
flour tortillas, 1 per person
oil
vanilla ice cream
honey
cinnamon

Directions:
Heat small amount of oil in skillet. Cut tortillas into 4 pieces, shaped like a triangle. Once the oil is heated, place a single layer of tortillas in the skillet. cook a minute or two, until the edges start to brown, then flip the tortillas over, using tongs. Cook on the other side until both sides are golden brown and crispy. The tortillas may puff, and they may not, either way is fine. Remove fried tortillas to a paper towel to drain excess oil. Repeat with remaining tortilla pieces. Once all pieces have been cooked, place desired number of tortilla pieces in a bowl, drizzle generously with honey, place scoop of ice cream in the middle, and sprinkle with cinnamon. You can also sprinkle crunched up cooked torillas on top for looks.

This is so easy and so yummy! Just like at a Mexican restaurant!
