January 2011 Menu Plan

Whew! What a year! I started this blog almost one year ago and I have really loved every minute of it. Well, except for the few weeks in November and December when I was so incredibly nauseous I couldn't think of eating. I'm sorry the blog lacked posts during that time. But, I am pleased to report that there was a good reason for it. My family and I are expecting baby number 3 in June! And guess what? This time it's a girl! Yahoo! I don't really know if it's hit me yet that we are going to 1. have another baby or that 2. it's going to be a girl. Crazy, I know. So thanks for being with me through it all, I hope you didn't lose interest while I was eating nothing but Rice Krispies and Cheerios.

But now that I'm in the second trimester, I am hungry all the time and I'm ready to make some yummy meals. I've seen so many great things I want to make in the past couple of days, and I've added them all to my menu plan this month along with some old stand-bys. I can't make something new every night, I don't think my budget could handle that one!

I hope you all have a blessed 2011 and continue to cook yummy foods for yourself and your family. If you ever want or are looking for a recipe for something, just email me, comment on here or on facebook and I'll do my best to come up with one and test it out before sending it your way. Your suggestions help me to be a better blogger and cook! I'm also on the hunt for dishes that freeze well. With baby coming in June, it may be helpful to have some meals stocked up in the freezer. I may do a whole series on that, so please email me or comment with ideas for that. I don't have a full month listed because some nights I won't cook or I'll add something new.

Spicy Lemon Garlic Shrimp served over angel hair pasta with salad or steamed broccoli

White Chicken Chili with fresh bread

Dirty Rice with Green Beans

You blow me away! This all sounds so yummy .
I think it's pretty smart you don't have the dates indicating when you'd make each dish... Otherwise you might have found my hubby and I camped out at your door, forks in hand, a couple of nights!

Long time reader, first time commenter! I love your blog and the recipes you try. Congratulations on your new arrival! My first is also due in June (the 27th) -- when is your due date? I will read with interest about frozen meals as we'll be preparing those, too, in advance of our new arrival.

Congratulations Amber to you and your beautiful family!!!! - delighted to hear such HAPPY, HAPPY news! And June is such a great time to have a baby....my daughter was born in June. I'm now counting down the days until our little one arrives...any day now.
