Homemade Shake and Bake Potatoes

I made these a while back, but never posted the recipe. They were so tasty! My husband raved about them. I will take this moment to let you know that my boys don't like potatoes. I don't really care that they don't like potatoes since they aren't the best thing on their plate to eat. I always make them try potatoes when I make a new recipe, but I really would prefer that they love their veggies, which they do. So, in all my potato recipes, their opinions don't count. I know one day they will like them, so it doesn't bother me right now. Anyway, back to these potatoes. I grew up having a lot of shake and bake meals, pork chops, chicken, potatoes, etc. I had really forgotten about shake and bake potatoes until I saw this recipe on another site. I knew I had to try them, because, unlike my boys, I love red potatoes. My husband and I gobbled these up. They are easy to make, and you can change it up and use either Italian or ranch flavoring. I used Italian, because I'm more partial to that. My mother in law used ranch when she made these and everyone loved them too, although, I still think I prefer the Italian. Enjoy these yummy little potatoes!

Homemade Shake and Bake Potatoes
slightly adapted from Real Mom Kitchen

Ingredients:
5-6 medium red potatoes
1/8 cup olive oil (plus more if you think it looks too dry)
1/2 cup Italian style bread crumbs
1/2 package dry ranch dressing mix or dry Italian dressing mix (I used Italian.)
1/2 tsp paprika
1/8 tsp garlic powder
1/8 tsp pepper
1/8 tsp salt

Directions:
Preheat oven to 450 degrees F.

Wash and dry potatoes. Cut potatoes into 1 inch cubes. Place potatoes in a large bowl or gallon-size bag and drizzle with olive oil. Toss or stir well until potatoes are coated with the oil. Combine the remaining ingredients in a small bowl and stir together. Add dry ingredients to potatoes. Shake in the bag or stir in the bowl until all potatoes are coated with the seasoning mix.

Place coated potatoes on a baking sheet sprayed with nonstick spray. Bake for 30-45 minutes at 450 degrees F, stirring and flipping potatoes halfway through.

Remove from oven, salt to taste and serve. Potatoes should be light and golden brown when they are finished. Keep an eye on your potatoes and make sure they don't burn, bake time may vary depending on the size of potatoes.

Too funny -- when I first read the title I thought it said "Homemade Shake and Baked Potatoes."

I was trying to figure out how/why you would combine having a milkshake with baked potatoes!

I think I'd like to try this on pork chops too! My husband LOVES shake and bake, but I don't care for buying prepackaged anything.
