Quick Nutty Dijon Salmon

As I mentioned earlier this week, I'm participating in Fab with Five recipe contest hosted by Saucy Mama. This is my third entry for the contest. This is so very easy to make and it tastes so yummy! I love Dijon mustard, and using it on salmon paired with pecans and some olive oil makes a very tasty and healthy meal. Don't forget to enter the Saucy Mama GIVEAWAY!! Quick Nutty Dijon Salmon
*Serves 2 (just double ingredients to make more)

Ingredients:
2 salmon fillets
2 tbsp Saucy Mama's Dijon Mustard
2 tbsp non-fat yogurt or olive oil ( I use olive oil)
1/2 cup Pecan Chips
Fresh ground pepper to taste

Directions:
Preheat oven to 450 degrees.

Combine mustard, pecans and olive oil (or yogurt).  Place salmon on baking sheet lined with foil. I spray my foil with nonstick spray. Spread mixture over salmon. Add black pepper.

Bake 12-15 minutes in preheated oven until fish flakes easily.

*note: may need to cook shorter or longer depending on thickness of fish.

Yummy! This looks good. I will have to give this a try with the yogurt.
