"Grilled" Chicken Tenderloins

These were so yummy! I made them earlier this week and they were a hit! I accidentally used a 16 ounce bottle of dressing, not noticing how big it was, so my chicken took a little bit longer to cook. I also didn't quite marinate the chicken for an hour, but it was still so flavorful! I got this from Tina at Mommy's Kitchen. She says it's a copy cat of Cracker Barrel's Grilled Chicken Tenderloins. I've never had them before, but I can attest that these are pretty tasty and easy!

"Grilled" Chicken Tenderloins

Ingredients:
3-4 chicken breasts, cut into strips
1 cup Italian Dressing-8 ounces (I used zesty Italian.)
2 teaspoons lime juice
4 teaspoons honey

Directions:
Cut each chicken breast into strips or use tenderloins pieces. In a bowl mix the dressing, lime juice and honey until combined. Add the chicken and toss to coat all the pieces. Marinate in the refrigerator for 1 hour. Pour entire mixture into a large skillet. Bring to a boil and then lower heat so that mixture is simmering slowly. Allow the mixture to simmer until almost all the liquid has cooked down and there is a little bit of glaze left in the pan. You dont' want them to be dry, they will have a nice sticky glaze on the outside of them. Once the liquid is getting low, make sure to stir the skillet often to prevent burning. The whole process will take about 45 minutes.
