Fluffy Quinoa

I finally joined the latest food craze. I tried quinoa last week and we all really liked it! I have heard so many great things about it and how healthy it is for you, yet I still hadn't tried it. I would say it is very similar to couscous, but it's supposed to have more protein. Either way, it was good and it will become a staple here. I can't wait to experiment with more recipes. There are so many out there right now! This was a great side dish and I can't wait to have it again. Next time, I think I'll toast the quinoa before cooking it in the skillet with some butter. Yum!




Fluffy Quinoa
From This Mommy Cooks


Ingredients:
1 cup quinoa
1 tablespoon butter
1/2 small onion, minced
1/4 teaspoon salt
2 cups chicken broth/stock

Directions:
Read your package of quinoa to see if it is pre-rinsed. If not, make sure you rinse it until the water runs clear. Melt 1 tablespoon butter in the skillet over medium heat. Add the onion and salt and cook, stirring occasionally until softened, about 5 minutes. Stir in the broth and quinoa and bring to a boil. Cover, reduce heat, and simmer for 15 minutes until all liquid is absorbed. It will have tiny spiral-like threads around each grain. Season with salt and pepper to taste and serve.

I have to serve it more often; it is good and considered a Super Food. I have make Pilaf and Salads; really tasty. Please share your future recipes.

Amber,
Did you soak your quinoa first? Mine has always had a somewhat bitter taste, and I've heard you have to soak it to get rid of that. If you bought some non-bitter quinoa, I would love to know where so I can buy it!

Mine doesn't have a bitter taste. I have only used the Trader Joe's brand, although I just bought a 4 pound bag of organic pre-washed quinoa from Costco for $10!! Have you used broth instead of water? Maybe that will help with the flavor?

Rita- I've already made two more yummy things I can't wait to share!
