Poofy Pancake {Sweet Treat Tuesday}

Umm...let me tell you that this was a huge hit at my house. I showed the boys what it looked like before I put it in the oven, and then when it came out there were squeals of delight. This is so cool how it "poofs" up and makes all kinds of bends and folds. My husband raved about how good this was and how we had been missing out on it for so long. I think it is like a German pancake, maybe. I'm not German, nor have I had a German pancake, but I'm thinking these are what they are supposed to be like. Next Saturday, make this for your family and I promise they won't be disappointed. We topped ours with maple syrup and fresh fruit. My tummy is growling just thinking about it!






Poofy Pancake

Ingredients:
5 eggs
1 cup milk
1 cup all-purpose flour
1/2 teaspoon salt
1 Tablespoon sugar
1 teaspoon vanilla
3 Tablespoons butter, divided into 1 Tablespoon increments

Directions:
Place butter in a 9x13 dish and place in the oven while preheating the oven to 400 degrees. Once the butter is melted, remove from oven until all the way preheated.

Place the eggs, milk, flour, salt, sugar, and vanilla in a blender or food processor; cover and process until smooth. Pour the batter into the baking dish over the melted butter. Place in oven and bake for 20 minutes until poofy and cooked through.

We had one of these at a bed and breakfast in Tempe, AZ. The owner called it a Dutch Baby and served it with a lemon wedge and powdered sugar. Oh. My. Goodness. To say I have been craving one since (um, New Year's of 2000) wouldn't be a huge stretch :)

OMG I LOVE this recipe! Only thing I do different is I use 8 Tablespoons of butter so ya, 1 whole stick. I just LOVE butter and the original recipe calls for 8 Tablespoons but it still works with less for people who are scared of fattening foods. Go to link below for my blog post on this
