Baked Southwest Cheese Dip

I made this way back for the Super Bowl. It was so good! I served it with torilla chips, but I bet fritos would be good too. Easy and yummy!





Baked Southwest Cheese Dip
slightly adapted from Macaroni and Cheesecake

Ingredients:
1/2 cup light mayo
6 oz. cream cheese, softened
3/4 cup roasted red bell pepper, chopped
1-2 jalapeno peppers, seeds and ribs removed, finely chopped (I used 1.)
2 cups grated sharp cheddar cheese, plus extra for sprinkling
2 cups pepper jack cheese, grated
1/3 cup onion, finely chopped
1/3 cup cilantro, finely chopped
1 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper
Pinch salt and pepper to taste


Directions:
Preheat oven to 350 degrees and spray a 2 quart baking dish with cooking spray, set aside.

In a medium bowl add all ingredients, reserving 2 tablespoons of cheddar cheese for top. Stir well until all ingredients are combined. Spread mixture into the prepared baking dish. Sprinkle the remaining 2 tablespoons cheddar cheese evenly over the top. Bake for 20 to 25 minutes, until cheese has melted and is bubbly. Serve with tortilla chips.
