Garlic Butter Potato Wedges

Well, I know it's Tuesday, and I know this isn't a sweet post. But, I don't have anything for you! I did make a pie week or so ago, but I want to save it for next week since it's almost "PI Day." You know me, always thinking ahead, not really. I made these yummy potato wedges last week when I splurged on some steaks. The weather has been so amazing here recently that I needed to use my grill! These were so good. My husband took one bite and said, "Man these are good!" I smiled, like I always do. So easy and tasty!





Garlic Butter Potato Wedges

Ingredients:
3-4 Tablespoons butter
1 Tablespoon dried parsley
2 Tablespoons garlic, minced
4-5 small to medium red potatoes, cut into wedges
salt and pepper to taste, optional

Directions:
Preheat oven to 425 degrees F. Place potatoes on greased baking sheet in a single layer. Bake for 10-15 minutes and then flip wedges and bake an additional 10 minutes taking care not to burn them.

Meanwhile, in a skillet, melt butter. Add in garlic and parsley and cook until garlic is fragrant, about 3-5 minutes. Toss in cooked potato wedges, making sure each one is coated with the butter mixture well. Serve hot.

Love this kind of potatoes; much better and healthier than fries.
