Crispy Tilapia Parmesan

Oh I couldn't wait to share this recipe with you guys! I  made it earlier this week and it is so good!! It really is just like chicken Parmesan but made with tilapia. My chicken Parmesan recipe is baked, this recipe is fried. Next time, I think I will try out baking it at a high heat to make it a bit healthier. But this was so good! I can't wait to make it again. It's easy and pretty quick. I love new fish recipes!



Crispy Tilapia Parmesan
slightly adapted from eating well living thin

Ingredients:
1 1/3 cups favorite spaghetti sauce (jarred or homemade)
1 garlic clove, minced
3 tablespoons heavy cream
4 Tilapia fillets 
1/2 cup flour
1/2 teaspoon Kosher salt
1/2 teaspoon freshly cracked black pepper
1 egg, beaten
1 1/2 cups Panko crumbs
1 teaspoon Italian Seasoning
Freshly grated Parmesan, optional

Directions:
In a medium sauce pan, over medium-low heat, bring the sauce and garlic to a simmer. Allow sauce to cook until reduced by half, stirring occasionally. The sauce will become darker red and thicker. Stir in the cream and heat through. Keep warm until tilapia is prepared. While sauce is simmering, prepare the tilapia fillets. In one bowl, place the flour, salt, and pepper. In another bowl, the beaten egg and in another the crumbs mixed with Italian seasoning. Coat each fillet with the flour mixture, dip in egg until covered, and then dredge through panko crumbs and press on the crumbs as you do it. Heat a frying pan on medium to medium-high heat until very hot.  Add a little olive oil and cook the fish for 3-4 minutes on each side until crispy-golden and fish flakes easily with a fork. Remove to a plate and spoon the warm sauce over. Top with Parmesan.

This is really a great fish recipe. But I guess it would taste good too if do it to pork chop. :)
