Braised Red Cabbage

I'm not usually a cabbage fan, but this was delicious. It was served as a part of my cooking club's "Taste the Rainbow" theme. This was purple! 


Braised Red Cabbage
from my friend Stephanie, originally from Nom Nom Paleo

Ingredients:
1 red cabbage (green works great as well), outer wilted leaves and core removed, and sliced very thin
1 medium onion, thinly sliced
3 tablespoons bacon grease (any oil/fat will work)
1 tablespoon sherry vinegar
1 bay leaf Kosher
salt and pepper
½ cup water
1 apple, peeled and grated

Directions:
Chop up cabbage and onion, set aside. Heat bacon grease in a large cast iron skillet.  Once the grease is melted, cook the onions for about 5 minutes. Next, add the cabbage, vinegar, bay leaf, salt, pepper, and water. Bring to a boil, cover and lower the heat until just simmering. Simmer the cabbage for about 20 minutes. While cabbage is cooking, peel and shred an apple. After it simmers for 20 minutes add apple to the cabbage mixture.  Let it cook for 5 more minutes. Add salt and pepper to taste.
