Cajun Chicken and Rice

This dinner was surprisingly a hit at my house. We love spicy stuff. I wanted to make dirty rice, but I decided to change things up by using chicken. It was great!! This is a super easy meal, and if you keep cooked shredded chicken in your freezer, you have a really easy and quick meal!



Cajun Chicken and Rice

Ingredients:
3-4 Cups cooked rice (I used brown)
1-1-1/2 pounds chicken, cooked and shredded
1 1/2 Tablespoons Creole Seasoning (I use Tony Chachere’s), or less if too spicy
olive oil
1 stalk celery, chopped
1 small onion, chopped
1/2 Bell Pepper, chopped
2 Tablespoons chopped or minced garlic
4 Tablespoons fresh chopped parsley (or 2 Tablespoons dried)

Directions:
In large skillet over medium heat, place a bit of olive oil, celery, bell pepper, garlic, onion, and parsley. Cook until vegetables are tender.  Add chicken and Creole seasoning, stir and cook for a minute or two. Stir in rice and continue cooking over medium heat until rice is heated through, stirring well the whole time.
