Parmesan Crusted Chicken

A week or so ago, I posted a recipe for Parmesan Crusted Salmon. I said then, how yummy I thought the breading would be on chicken. Well, we decided to try that out last night. And boy was I right. It was delicious! This is easy, and yum!

Parmesan Crusted Chicken


Ingredients:
1 TBSP olive oil
1 garlic clove or 1 heaping TBSP minced garlic
1/4 cup flat leaf parsley or 1 tsp dried parsley
2 slices whole wheat bread or 1/2 cup seasoned bread crumbs
1/4 cup Parmesan cheese
2 tablespoons olive oil
1/4 teaspoon salt
fresh ground black pepper, to taste
4 teaspoons Dijon mustard
4 chicken breasts, trimmed of fat


Directions:
Heat oven to 400. Lightly coat your baking dish with non-stick spray. In a food processor, mince the garlic clove then add the parsley and pulse until combined. Add the bread crumbs, cheese, oil, mustard, salt and a few grinds of black pepper. Pulse until well combined. Arrange the chicken in the baking dish. Drizzle olive oil on top of chicken. Spread crumb mixture on top of each piece until covered.  Bake until browned and cooked through, about 24-26 minutes for. It is cooked through when juices run clear.
