Restaurant Style Smashed Potatoes

These potatoes are uh-mazing! Let me reiterate, these potatoes are delish!! They were easy to make and would go with so many different things. This is the first time I've ever used french fried onions, and I'm addicted. I was eating them straight out of the bag like potato chips. Yes, I know, gross, but I couldn't help myself. Make these potatoes, they will not disappoint!



Restaurant Style Smashed Potatoes
slightly adapted from Pioneer Woman

Ingredients:
3-4 whole Large Red Potatoes
4-6 TBSP Butter, Softened And Cut Into Pieces
2 slices Bacon, cooked and crumbled
2 whole Green Onions, Sliced
1/2 cups Sour Cream
Salt To Taste
Freshly Ground Black Pepper To Taste
1/2 cups French Fried Onions,  Plus More For Topping

Directions:
Bake potatoes in the oven until fork-tender. (400 degrees for 45 min-1 hour) Add potatoes to a large bowl and smash with a potato masher. Immediately add softened butter, green onions, bacon, and sour cream, then stir with a rubber spatula. Add salt and pepper to taste. Add french fried onions and fold in.

Serve hot, sprinkling extra french fried onions and green onions on top.

French Fried Onions make everything taste better!! I know have a permanent spot for a few cans of them in my pantry. I just made some Garlic Smashed Potatoes this weekend...soooo good. ~Prairie Story
